A story of a small sandwich shop that changes the game
It’s 1991 and a family in Florence decides to open a small sandwich shop. It’s 2014 and that same family business has become the most-reviewed restaurant in the world on TripAdvisor.
What started as a celebration of Tuscany’s finest ingredients and the beauty of Italian simplicity has grown into one of the country's biggest culinary success stories. Today, All'Antico Vinaio welcomes thousands of visitors every day, with branches stretching from New York and Las Vegas to Dubai and Melbourne. Yet despite its international expansion, people still travel to Florence to experience the original. So, what is the story behind the sandwich shop that took the internet by storm?
I first came across All'Antico Vinaio after leaving the famous Uffizi Galleries. Before I even spotted the storefront, I noticed the queue. It stretched well beyond the entrance, filling the narrow street with tourists and locals. Some people casually mentioned they had expected to wait an hour for lunch. Fortunately, that wasn't my experience. Within minutes, I found myself holding a sandwich almost too large for two hands.
Stepping inside, it quickly became clear why the menu is so appealing. Rather than trying to offer endless options, All'Antico Vinaio focuses on exceptional Italian ingredients. Traditional cured meats such as mortadella, prosciutto crudo, prosciutto cotto and speck are paired with creamy burrata, fresh mozzarella, pecorino, seasonal vegetables and homemade spreads. Every sandwich is assembled inside warm schiacciata which is a traditional Tuscan flatbread that is crispy on the outside yet soft inside.
The shop's modern success is also closely linked to Tommaso Mazzanti, who took over the family business and transformed it into a global phenomenon. Through energetic social media videos and an unmistakable passion for Florentine food culture, he introduced millions of people to a place that had long been loved by locals. But while the internet helped make All'Antico Vinaio famous, it could never have sustained its reputation on its own. Viral videos may attract first-time visitors, but quality is what keeps the queues growing year after year.
After taking my first bite, I immediately understood why so many people recommend stopping here. There is nothing overly complicated about the recipe. There are no extravagant cooking techniques or unusual flavour combinations. Instead, the secret lies in respecting the ingredients. Fresh bread, carefully selected cheeses and cured meats, high-quality olive oil and generous portions create something that feels both comforting and unforgettable. It is a reminder that Italian cuisine has always been at its best when it allows excellent ingredients to speak for themselves.
Although All'Antico Vinaio can now be found across several continents, I cannot imagine it tasting quite the same anywhere else. Enjoying a warm schiacciata while sitting on the streets of Florence, surrounded by centuries of history just moments away from the Uffizi Galleries, is part of the experience. The sandwich may have become a global sensation, but its soul still belongs to the city where it all began.
